Choice Goat Meat Cuts
Neck
Goat necks can be braised or made into a stew and served with rice or other choice of grain. The neck bones can be pressured or boiled down with choice of spices to form a robust broth
Leg Shank
Leg shanks make a tasty meal when seasoned, slow-cooked and served with rice, pasta or your choice of grain or vegetables.
Rack
A full rack consists of 8 low-fat ribs that can be prepared as single-crusted servings or as 2 -3 racks tied together. Served on a bed of Basmati rice or other grain, the preparation can be accented with a dash of mint and rosemary garnish and paired with the wine of your choice.
Loin Roast
The loin roast (saddle) is one of the most tender and most prized cuts. Prepared by first rubbing with a mixture of your favorite herbs and spices in virgin olive oil, it is first seared before finishing in the oven. The result is succulent and delicately flavored.
Leg
Our Goat leg is the prime center section with the rump and shank removed. Depending on your choice of preparation our cut makes for easier cooking. and delivers a portion of flavorful meat with a high meat to bone ratio of consistent tenderness throughout.
Shoulder
The goat shoulder is best prepared by braising. Slow-cooked with vegetables such as carrots and potatoes and your selection of herbs and spices the preparation will yield the equivalent of a pulled meat that falls off the bone, readily.
Stew Meat
Our boneless stew meat is typically in cubes up 1.5 inches. This cut is best enjoyed in curries, and is a favorite in Caribbean communities where its low fat content allows it to stand up to rewarming.
Ground
Ground goat meat can be made into patties and substituted for any traditional ground beef or lamb recipe. It is one of the favorites of many of our customers who enjoy African and the middle -Eastern cuisine.
Riblets
Riblets are best broiled barbecued or braised. Strips consist of 4-5 riblets that are approximately 5 by 2.5 inch strips. We sell our riblets in meal-ready 3-strip packages.
Bone-In
Our bone-in-meat cuts come in 2 inch pieces. This is best prepared in a variety of succulent stews where the gristle off the bone absorbs the juices. Like its boneless counterpart it is most flavorful in curries.
Loin Chop
Loin chops are one of the most tender of cuts and equivalent to the tenderloin filet in beef. Well suited for the grill, they can be prepared in a light garlic salt and pepper rub. A single packet contains four 1-inch thick chops.
Organ
Our organ meat pack is a limited supply item. When available is sold as a compliment to your order. It contains a mix of liver, tongue, heart, kidneys or sweetbreads included upon request.
